I discovered the joy of baking during COVID-19. About the only things I used to bake pre-COVID were cookies and rum cake. I used to be terrified of working with dough, did not know what proofing was, or the difference between puff, filo, shortcrust, and choux pastry. I have come a long way and as I become more educated, look forward to enhancing my baking skills. When I retire, I plan to open a little bakery serving delightful tarts, pies, pastries, buns, cakes, and biscuits - something I’ve always dreamed about.
