Flour makes a difference

I made this exact same bread a few weeks ago with regular flour as I ran out of bread flour. The bread was alright then. Today, I used bread flour and I will say it makes a huge difference. The higher gluten content in bread flour resulted in an airy and chewy bread - just like bread should be. Always have bread flour handy!
