Healthy chocolate truffles

Truffles aren't difficult to make, yet they're super pricey to purchase, so I decided to make my own today. These are healthier than the typical chocolate truffles because I used dark chocolate, unsweetened soy milk, Earl Gray tea, and orange zest. I don't think they'll last through the week because they're so good!


Recipe (22 pieces):

Ingredients:

12 tbsp unsweetened soy milk

6 gm Earl Grey tea leaves (placed in a bag)

8 oz 72% dark chocolate

2 tsp orange zest

3 tbsp cocoa powder


Instructions:

In a small pot, bring soy milk to a boil. Remove from heat and add the Earl Grey tea bag, allowing the mixture to steep for 20 minutes.

Squeeze all liquid out of the tea bag. Add infused soy milk, orange zest, and chocolate into a heat resistant bowl placed over a pot of water. Stir until the crocolate is melted.


Remove the bowl from the pot and whisk the mixture until smooth. Refrigerate mixture. Once cooled, cover with plastic wrap and return to the refrigerator to set for an hour.


Using an ice cream scoop, scoop chocolate and place roughly formed truffle on a plate. Refrigerate to harden truffle so it's easy to roll into a round ball. Spread the cocoa powder onto a new clean plate, and roll truffle until covered in cocoa powder.


Return to refrigerator for about an hour to solidify before serving.
