I love pineapple tarts. It's my absolute favorite snack. I'm picky about the pineapple filling and the pastry and I've yet to find good homemade ones in the U.S., so I'd rather make them myself like I did the last couple of years. However, pineapple tarts is extremely time consuming and I've been busy lately exploring business opportunities and going to hockey games. That said, I did find time to make some quick and easy snacks - peanut cookies and spiced nuts. I've at least gotten my act together and given sets of 8 peanut cookies away as new year gifts.
