Those who know me know I dislike pumpkin - pumpkin pie and pumpkin spiced latte included. However, when I came across this pumpkin ginger soup recipe, I felt compelled to make it because Nik Sharma is one of my favorite food writers and cookbook author, and I love how he plays with flavors. Turns out I actually quite like this soup. I just can’t have a lot of it. Neither will I make it again because I don’t enjoy cooking. This involved too much work, and I don’t love the soup enough. I much prefer baking a dessert.
