Chinese five-spice

I never ever imagined using Chinese five-spice as a core ingredient in a cake, until I stumbled upon Nik Sharma’s blogs and newsletter. The latest newsletter featured a Chinese five-spice pineapple cake - intended to be a ‘transition’ cake as we say goodbye to hot summer days, and welcome to cooler Fall days. I thought it was an interesting recipe and truly season appropriate so I made it. I love the flavor, so did a few friends!
