Creating balance

I had a USDA prime burger last Friday on my paddleboard on the lake (I ordered dockside pickup), and a ton of meat yesterday at my friend’s store (Beast and Cleaver), so I needed to balance my diet with some vegetables. But vegetables just doesn’t sound so appetizing right? So I created this zucchini (also known as courgette) tart with red onions, goat cheese, and tomato coulis. Now this is vegetable I look forward to eating!
