Equal weights of butter, sugar, and eggs

Updated: Mar 8, 2021

There is something attractive about a recipe that uses equal weights of some core ingredients. This cake is simple to make but goes against typical baking procedure: Butter and sugar first, followed by half the amount of flour, eggs (one at a time), followed by the rest of the flour. Hmm...who invented this? This lemon Madeira cake with lemon candied peel goes well with a glass of Madeira wine!
