Healthy pie

I can’t say most pies are healthy because of the butter in the pastry. This one though contains no butter or eggs. The filling is pretty healthy too - organic chicken, fresh turmeric (not in the recipe but I added it), leek, butternut squash, dried cranberries, dates, parsley, ginger, and lots of other herbs.


The pastry is fun and easy to make. Instead of rolling it out and baking it, you first cook it on a pan that’s placed above a pot of boiling water. The steam cooks the thin layer of batter. Do this about 12 times to get 12 sheets which you then line a cake tin with. How fun is that?
