I like using olive oil in baking as it’s healthier than butter. This strawberry rosemary olive oil cake is light, airy, and moist. I’m not a fan of the ricotta cheese and I think the cake tastes great without it. The strawberries drenched in rosemary infused honey is delicious and adds a beautiful flavor to the olive oil cake.
Note: Instead of infusing the honey with chamomile tea, I used fresh rosemary.
