I love a quick and easy recipe that’s also healthy, pleasing to look at, and most importantly, delicious. This is a keeper. The crispy pastry, creamy cheese, and olive oil drizzled zucchini makes for a great meal. I suggest investing in a good cheese as it is a critical component of this tart. I used Laura Chenel‘s signature and award winning fresh goat cheese made with local milk from family farms.
