Things I learned from the baking show

Spanakopita is yet another thing I learned from the Great British Baking Show. While delicious and somewhat healthy, this was a patience cultivator requiring five see-through thinly rollled and stretched-out layers of dough, buttered and stacked on top of the other to make filo pastry. I know you can just buy filo pastry but I’m a sucker for a challenge. Besides, what fun would there be - anyone can make spanakopita with store bought filo. It is well worth the work ..... and the patience.
