I’ve baked a lot of cookies and bread lately so I decided that a cake would be in order this weekend. I found a simple recipe that would go well with tea for an afternoon pick-me-up. The author called the cake Russian honey cake. However, in my research, the real Russian honey cake is a layered cake with notes of honey and caramel, and the crispy and thin layers are separated by a thick cream cheese frosting. So, I’m calling this cake what it is - honey walnut cake.
