San Miguel on my mind

Although difficult to get to, San Miguel is a gem and I still love that place as much as I did the first time I went there 4.5 years ago. The people - drivers, store keepers, business owners, hotel staff, cab drivers et. al. are so nice and helpful. The food and drinks are amazing and so much cheaper compared to Seattle. There’s so much to see and do as well - from wine tasting, to horseback riding, hot springs, and pyramids. This bake is inspired by the delicious herbed breads that were served with our meals. I miss the food!


Note: Instead of warm water, I used warm almond milk for a fluffy soft texture.
